Product Formats:

  • Peach Pastry*: A flour that will create a tender cake with a bright crumb colour. Best for cakes and pastry.
  • Tulip Pastry and Cookie:* A flour with protein levels that allow for more open structure and oven spring. Best for cookies and pastries.
  • Velvet Hi Ratio Cake*: A top patent flour ideal for high-ratio cakes that is bleached and treated with maturing agents.
  • Flaky Crust: An unbleached premium flour that can be used to make a variety of pastries. Also makes tender cookies with a larger spread.

*Product available in Eastern Canada and Western Canada with unique product codes and produced with locally sourced soft wheat.
